Garlic Lemon Shrimp & Quinoa Bowl

Ingredients (Serves 4)

1 lb shrimp (peeled & deveined)
1 cup quinoa (rinsed)
2 cups low-sodium vegetable broth (or water)
1 tbsp olive oil
2 cloves garlic (minced)
1/2 tsp red pepper flakes (optional)
1/2 tsp paprika
1 lemon (zested & juiced)
1 cup cherry tomatoes (halved)
1/2 cup cucumber (diced)
1/4 cup red onion (finely chopped)
2 cups baby spinach or arugula
1/4 cup feta cheese (optional)
1 tbsp fresh parsley (chopped)
Salt & pepper to taste

Instructions

1️⃣ Cook the Quinoa:

In a pot, bring broth or water to a boil.
Add quinoa, cover, reduce heat, and simmer for 15 minutes.
Remove from heat and fluff with a fork.

2️⃣ Prepare the Shrimp:

Pat shrimp dry and season with paprika, salt, and pepper.
Heat olive oil in a skillet over medium heat.
Add garlic and red pepper flakes; sauté for 30 seconds.
Add shrimp and cook for 2-3 minutes per side until pink and opaque.
Squeeze in lemon juice and zest, then remove from heat.

3️⃣ Assemble the Bowl:

In a large bowl, toss spinach, cherry tomatoes, cucumber, and red onion.
Add quinoa and shrimp.
Top with feta (if using), fresh parsley, and extra lemon juice.
